Yes you will be able to output 5.1 6.1 and 7.1, even more if developers wanted to, since all sound will be processed by the cell there can be as many channels as it can handle which is alot.
Now it all depends if developers want to output 7.1 in their games, Most lazy ones will just stick with 5.1. This of course applies only for games.
Now for blue ray well my friend we're in for treat.
Bluray movies will be able to be played yes in 5.1,6.1, and 7.1, but thats not the sweet part of it. The cool thing is that Bluray movies are very soon going to sport "dolby digital HD" and best of all "DTS-HD" which I believe will be the highest sound quality available to us the consumers. To give you an idea Dolby Digital at the present does about 384 or 448 kbits/s, DTS does 768 or 1536 kbit/s (overall).
DTS-HD Master Audio and Dolby TrueHD are the only technologies that deliver compressed lossless surround sound for these new disc format, ensuring the highest quality audio performance available in the new standards.
TrueHD supports 24 bit, 96 kHz audio channels at up to "18 Mbit/s" over 8 channels (Blu-ray Disc standards currently limit their maximum number of audio channels to eight, Dolby TrueHD can output up to 14 sound channels simultaneously).
DTS-HD Master Audio can support even more channels of discrete sound. At an even higher bit rate.
Top that with the fact that PS3 can output 1080 P the highest form of resolution available, and you got your self and entertainment monster. With no drawbacks, and no limitations.
Of course to get HD audio and HD Video youll need to loose an arm and leg to purchase an HDTV 1800p and an HD audio receiver. you will get 5.1,7.1 and above all you will get dolby hd.go to dolby website for further knowledge about dolby hd.
