I think that certain Canon cameras can do that, it is called Colour Accent and makes all colours other than the one chosen monochrome. The cameras with this feature are the S3 IS and the S80 although there may be others.

I am sure the effect could also be produced with photoshop. none. that is a post-processing effect. Do they really have those? Where you can make a red headed persons hair the only thing colored in the b&w photo?

You can make a color photo black and white, sepia-tone and many other variations of color enhancement or removal. Some digital cameras have settings that produce a black and white or sepia-tone, but they can not isolate and only leave a single color accent. Hi, I recommand you to try google picasa.

Good Luck! This is a post-processing technique called selective desaturation. It cannot be done in-camera, as there is no way for the camera to know what portion of the picture you want colored, and which part you want to be in greyscale. It has to be done in photo editing software, or in the darkroom if you shoot 35mm. no way to do it right away from a digital camera. This is about digital post-proccessing. You will need a digital imaging manipulation software such as picasa form google or Adobe Potoshop.
